Is my spouse covered on my Frequent Traveller Saver policy if she travels with me for only a part of my trip, but will be with me for 100% of that time?

For your spouse to be eligible to be covered under your Frequent Traveller Saver policy, she must leave and return with you, and of course, be travelling with you for 100% of the time. If your spouse will not be doing this, she will need to take out her own separate policy, as she would not be able to be covered under your Frequent Traveller Saver policy.
